Tomato and Cucumber Salad

When you say “salad,” everybody and his uncle automatically thinks “lettuce.” But really, it’s entirely possible to make a salad without any lettuce, spinach, or other spring greens. This tomato and cucumber salad is fresh and crisp, and it’s the perfect summer lunch or side to a family dinner. In most parts of the U.S. (if that’s where you live, like me), tomatoes and cucumbers start ripening in mid July and August. Fresh and good quality ingredients will make the salad all the better. If you don’t have your own garden, try to buy these organic in the grocery store or from your local farmers market.

Ingredients (1 serving)

1 large tomato

1 medium cucumber (peeling is optional)

red onion

white or red vinegar


fresh basil

1. Chop the tomato, cucumber, and red onion

2. Combine and toss with vinegar and salt to taste.
