Simple Summer Salad

This salad is super easy to put together–which means it’s great for anyone on the go (college students included!). It also features some great summer vegetables: raw beet and yellow squash add color and flavor to the leafy greens. Adding a quick burst of white vinegar is the perfect zing, too.

I’ve found that I really don’t like most store-bought salad dressing concoctions. (It gets really old to read the ingredients label over and over, finding something I can’t eat every time.) Making your own dressing is something I’ve come to do more often–and since I’m usually in a rush, I typically use balsamic vinegar (sometimes mixed with honey) or white vinegar. And I’ve actually come to prefer these flavors. To me, vinegars add the perfect amount of tangy depth.


1/2 red beet, shredded or diced

1 small yellow squash, diced

leafy greens of choice (arugula, spinach, red leaf, and romaine mix works great)

white vinegar to taste
