Aloo Phujia

Aloo Phujia is a traditional potato, tomato and onion recipe with an Indian kick. Its spiciness can vary, but it’s always delicious. If you need a way to dress up some potatoes and tomatoes for a quick side dish–try this recipe out.

This dish is also a great source of turmeric. Turmeric is a spice in the ginger family often used in curries. It is known for its deep yellow-orange color and health benefits because it is a natural anti-inflammatory.


1 onion, chopped

1/4 cup vegetable oil

1 pound potatoes (3 to 4), peeled and cubed

1 teaspoon salt

1/2 teaspoon cayenne pepper

1/2 teaspoon ground turmeric

1/4 teaspoon ground cumin

2 tomatoes, chopped


1. Lightly brown onion in oil in a medium size skillet.

2. Stir in salt, cayenne, turmeric and cumin. Add potatoes and cook 10 minutes stirring occasionally.

3. Add tomatoes, cover pan and cook until potatoes are soft, about 10 minutes.
