Roasted Walnut and Pear Salad

I had a nice dinner get-together with some friends recently to catch up. They did the cooking (I observed it all in the kitchen), and everything was so delicious that I had to take pictures and post the recipes for my blog.

This roasted pear salad is simple and delicious. It’s a perfect way to dress up some mixed spring greens in a fun, healthy way. I especially like this recipe because you make your own vinaigrette: no store-bought salad dressings with weird ingredients are needed.

Ingredients (serves 4 to 5)

3 to 4 ripe brown pears, quartered

1 package of mixed baby spring greens

Handful walnuts

Crumbled goat cheese, optional

Directions

1. Pre-heat oven to 375 degrees Fahrenheit. Place pears and walnuts on a baking tray and roast for 10 to 15 minutes.

2. When finished roasting, use a fork to transfer about three slices of pear to a blender. Blend until well-mixed: your homemade vinaigrette.

3. Fill a large bowl with the spring greens mix. Add the vinaigrette, saving a little on the side in case people want more or less on their salad. Add the pears and walnuts to the salad, toss and serve.
