Pasta with Tomato-Avocado Sauce

This is the main dish my friends served when I went over for dinner. They had no qualms serving gluten-free pasta–they even like the taste of it (and who wouldn’t? Because it is delicious). They often make this simple sauce to go with their pasta; it’s a way to cook without slaving away in the kitchen. Everyone at dinner really liked this main dish, and we even had to make more because it was so delicious. I hope you like it, too!

If you’re sick of the same old pasta sauce, this easy homemade sauce is a way to vary your routine. The guacamole and olive oil mix together and create a creamy (vegan!) sauce base that’s lighter than a pesto but richer than plain olive oil. The bright cherry tomatoes and cooked greens add pop to your pasta dish, too.

Ingredients

Extra virgin olive oil

4 cloves garlic, sliced

1 package Wholly Guacamole Classic, or homemade guacamole/whipped avocados

1 small-medium package of cherry tomatoes, halved

3 handfuls mixed baby greens

1 package your choice gluten-free pasta (we used Tinkyada brown rice spirals)

Salt and pepper, to taste

Vegan or goat cheese for topping, optional

Directions

1. Add a generous amount of olive oil to a small skillet, covering the bottom (and then some). When heated, add the garlic.

2. Stir in the ready-made guacamole, mixing well. Cook for about 3 minutes.

3. Add the tomatoes. Cook about 5 minutes.

4. Add the mixed baby greens, and a little more olive oil if needed, or if you want the sauce to be less thick. Cook until slightly wilted; do not overcook.

5. Remove from the stove, stir and serve with salt and pepper, and your choice gluten-free pasta.
