Corned Beef and Cabbage

My friends and I celebrated Saint Patrick’s Day with some traditional Irish food: Corned Beef and Cabbage. My friend Lucy made this last year for the holiday, and this year she decided to make it again (which was a wise decision, because it’s so delicious).


1 package corned beef, with seasoning packet

1 cabbage

4 large carrots, chopped

5 red potatoes, diced

Salt and pepper, to taste

1 teaspoon vegan margarine


1. Clean the corned beef. Place the corned beef and the seasoning packet in a crock pot or large pot on the stove.

2. Placed the chopped carrots and potatoes in the pot. Add a sprinkle or two of salt and pepper and the vegan margarine.

3. Top off with as much cabbage as you can fit into the pot. It wilts down pretty small, like spinach, so don’t worry about there being too much.

4. Fill the pot about half way (maybe less) with water.

5. If using a crock pot, put on high and let it cook for about 4-5 hours. If you make it in the morning feel free to put it on medium heat and let it cook slowly all day (7 to 8 hours). If you are using a large pot over the stove, cook with the same time and heat settings. Enjoy!
