Charred Eggplant and Buffalo Burgers

Summer is a time for grilling. And a time for burgers. Try this burger recipe to add some new flavor to your regular burger: grilled eggplant slices. Eggplant is a super cool summer nightshade veggie, and it’s pretty versatile. And it tastes amazing grilled.

I originally had a recipe where you charred, peeled, chopped, drained, and mixed the eggplant in with the ground meat to create mixed patties–but the prep time was over 2 and a half hours. For burgers. (Martha Stewart must have a lot of time on her hands. And she must not cook when she’s hungry…) So I decided to just grill the eggplant as is and enjoy my burger this way. I hope you do too!

Ingredients

1 medium eggplant, sliced

2 pounds ground buffalo or beef, formed into burgers

Gluten-free rolls or hamburger buns of your choice

Smoked salt

Extra virgin olive oil

Ketchup and mustard

Dill pickles, sliced

Lettuce and tomato

Directions

1. Rub eggplant sides with olive oil and smoked salt. Grill burgers and eggplant slices until tender and cooked through.

2. Arrange burger as desired with ketchup, mustard, lettuce, tomato on bun. Place grilled eggplant slice and burger patty on bun and top.
