Salmon with Tomato-Peach Salsa

This recipe was featured on the cover of July’s Cooking Light magazine. My sister and I saw it in the store and needed to make something for dinner, so… Voila!


1 peach, chopped

3/4 cup cherry tomatoes

1/4 cup red onion, thinly sliced

3 tablespoons mint leaves, chopped

3 tablespoons basil leaves, chopped

2 tablespoons lemon juice

1 tablespoon olive oil

1 tablespoon honey

1 jalapeno pepper, sliced

Salt and pepper, to taste

4 6-ounce salmon fillets


1. Mix all ingredients but salmon together to make the tomato-peach salsa.

2. Grill fish with salt and pepper. When done, serve with salmon. For side dishes, serve with a salad, rice or french fries.
