Banana Flax Muffins

This recipe is from Cybele Pascal’s Allergen-Free Baker’s Handbook.

I’ve made these muffins twice this summer. Mostly because both times we had bananas that were browning. And banana muffins are the perfect solution to that problem. These are super yummy, and they work even if you substitute Bob’s Red Mill’s Gluten-Free All-Purpose Baking Flour and forget the flax meal (which happened once…my bad).

If you make these for your friends and tell them they’re gluten-free and vegan, I guarantee they will be impressed.

Ingredients

1/4 cup canola oil

1 cup light agave nectar

1 1/2 cups mashed ripe banana (3 bananas)

2 tablespoons lemon juice

1 1/2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

3/4 cup golden flaxseed meal

2 1/2 cups Basic Gluten-Free Flour Mix (or use Bob’s Red Mill GF All-Purpose Baking Flour)

  • (makes 3 cups) 2 cups brown rice flour, 2/3 cup potato starch, 1/3 cup tapioca flour

3/4 teaspoon xanthan gum

1 1/2 teaspoons baking soda

1/2 teaspoon salt

1 cup raisins or nuts, optional

Directions

1. Preheat oven to 350 degrees Fahrenheit. Line a muffin pan with 12 muffin liners

2. In a large mixing bowl combine the canola oil and agave nectar. Add the mashed banana, lemon juice, cinnamon and nutmeg, and mix. Add the flax meal and mix until combined.

3. In a separate bowl, combine the flour mix, xanthan gum, baking soda and salt.

4. Add the dry ingredients to the wet and mix until just combined. If desired, fold in the raisins or nuts.

5. Fill the liners to the rim with batter; they will be heaping.

6. Bake in the center of the oven for 25 minutes, or until lovely golden brown on top, rotating the pan halfway though.
