Open Smoked Salmon Sandwich

My sister and I made a batch of salmon canapes awhile ago. We had leftover goat cheese and smoked salmon, so we made these open sandwiches. They turned out great and were super easy to make–and very tasty. They’re also a great new way to use the brand of gluten-free English muffins I discovered (though you can use any kind of bread you want for these).

Ingredients

Gluten-free English muffin

3 oz. goat cheese

1/4 tablespoon chopped cilantro

1/4 teaspoon dill

1/8 teaspoon salt

About 2 tablespoons lemon juice

About 1 tablespoon rice milk for creaminess, depending on the relative dryness of the goat cheese

Smoked salmon

Fresh romaine lettuce

Directions

1. Mix the goat cheese, herbs, lemon juice and rice milk together.

2. Meanwhile, toast the Gluten-free English muffin.

3. Once toasted, spread the English muffin with the goat cheese mixture. Top with a thick layer of lettuce leaves. Lay pieces of smoked salmon on top and enjoy!
