Roasted Summer Squash


1 or 2 large summer squash (patty pan, crookneck or other)

Salt and pepper, to taste

Olive oil


1. Preheat oven to 400 degrees Fahrenheit.

2. Slice the squash into thing strips. Toss with olive oil and season with salt and pepper.

3. Spread on a baking sheet and roast for 20 minutes. Enjoy as a snack, a side with dinner or however you want!
