This blog is the learn-in-progress work of me, Rebecca Sedlak: journalist, amateur cook and resident foodie. I graduated the University of Oregon in June 2012 with a Bachelor of the Arts in English and Journalism with an emphasis in magazine. I aim to have a career in book publishing, magazine journalism or food writing.

I know what you’re thinking:

How is it possible to eat allergen-free (or even healthy food) in college?

To tell you the truth, it’s difficult. The short budget and scant amount of time is hard enough.

The adjustment to allergen-free foods (and the constant process and substitution game) is wrought with absent-minded friends, tempting decadent-but-tummy-troubling desserts, and most money spent in the grocery store.

But life, learning, and love go on. And so does my ever-expanding collection of recipes and ambition.

As a girl with several food allergies/sensitivities, I’ve come to look at the world of food (and the world in general) in a whole new way.

What we eat actually affects our bodies? Our immune system? Our nutrition? Who would have thought? Since coming to this realization in high school, I’ve become a staunch supporter of organics, local foods, seasonal cooking and non-GMOs.

What don’t I eat? Here’s the list:

  • Gluten (wheat)
  • Dairy
  • Eggs
  • Mushrooms
  • Corn
  • And I shy away from:
  • Soy
  • Peanuts
  • Tree nuts
  • Sesame

Safe to say, few, if any, of these ingredients will ever grace the posts of this blog. So, if you have food allergies/sensitivities like me, you’re safe here (vegans are welcome too — if there’s meat, just omit it!).

Besides cooking, baking and blogging, I also pursue other pastimes. Recently I’ve gotten into gardening, thanks to an Urban Farm landscape architecture class at UO. I also love to read (English major and literary nerd alert), dabble in painting and hike the glorious Oregon countryside.

    that is some list! We’re avoiding Milk, Soy, Eggs, Peanuts due to my 2 y/o’s allergies (recently outgrew sesame). I thought avoiding 4 is hard… wow
